Sweet Potato Casserole


Autumn is in the air and there’s nothing like a sweet potato casserole fresh out of the oven.

Here is a recipe that was given to me by a friend. Yummy!


4 cups cooked sweet potato

1 cup sugar, granulated

1 tsp. vanilla

1/2 cup butter (softened)

2 eggs (beaten)

1 tsp. cinnamon

1/2 tsp nutmeg

1 cup brown sugar

1/2 cup all purpose flour

1 cup chopped pecans

1/3 cup soft butter


Combine potatoes, granulated sugar, vanilla, 1/2 cup butter, eggs, cinnamon, and nutmeg and blend well with electric mixer.

Pour into casserole dish, set aside. Combine brown sugar, flour, pecans, and 1/3 cup butter and mix until it forms a crumb-like mixture.

Spread over top of sweet potatoes and bake at 350 degrees for 45 minutes.
